Food for Fuel: Pea and Ham Soup

8 Oz Thickly Sliced Ham, torn
1.5 Cups Fresh Peas
1 Medium Potato, peeled and diced
1 Small Onion, finely chopped
4 Cups Vegetable Stock
1 Tbsp Butter

1. Melt the butter in a saucepan and add the onions.
2. Cook on a medium heat until the onions soften
3. Add the potato and coat in butter
4. Pour over the stock and simmer until the potatoes soften
5. Add the peas and bring to the boil for a couple of minutes
6. Remove from the heat and blend until smooth
7. Stir in the diced ham and serve
